This issue is fixed in Acronis Cyber Protect Home Office (formerly Acronis True Image). If you have an active subscription to Acronis True Image, you can upgrade to the new version at no charge: see How to upgrade to Acronis Cyber Protect Home Office.
As a workaround for Acronis True Image 2021 version, add outlook.exe to Active Protection exclusions list: see Configuring Protection exclusions
